Saint Peter, the game-changing seafood restaurant from Josh and Julie Niland, has climbed to No. 66 on The World’s 50 Best Restaurants extended list for 2025.
This achievement is a huge leap from last year’s spot at 98, and well deserved for this incredible duo and their team who continue to reshape how the world thinks about seafood. Representing Australia on the list also is an incredible feat!
The new home for Saint Peter, nestled inside The Grand National Hotel in Paddington, Sydney, is everything you’d expect from the Nilands — thoughtful, elegant, and just a little bit unexpected. There’s a beautifully intimate 40-seat dining room, a more casual 30-seat bar, a private dining space, and even a boutique hotel upstairs. It’s a big move, but one that’s paid off — not just with this international recognition, but in the way diners have embraced the new chapter.
We’re especially proud to see Saint Peter on this list because they’ve been long-time champions of NOROCK. Josh and Julie have trusted our self-stabilising table bases in their restaurants for years. No wobbles, no folded napkins, no distractions — just stable tables that let the food (and wine) shine. The Niland’s hold their suppliers to the same high standards they bring to their kitchen, which makes our ongoing partnership all the more meaningful.
